I just saw your good news about the almond meal pancakes.  Did you use a one for one substitution?

Also there is a product here called "Lupin Flour"  It is 10 g of Carbs per 100 g of flour (compared to 72 g Carbs for regular flour).  You can get it at health food stores.

    I just Googled "almond meal pancake recipe" and a ton of recipes came up.  Looks like it's mainly almond meal, egg and oil (I intend to use macadamia nut oil).  Various sites said they'e not exactly the same, but they're still good/worth it. 

    I'll try them on Saturday and see what they're like.  Amazeballs, I imagine, as I couldn't bring myself to eat a normal pancake usually. 

    Are you a low carb/gluten-free/paleo type?

  • Try to keep as lowcarb as possible.  Have to say, the Lupin flour worked for the country fried steak and gravy the other night  ;-)

    I haven't tried to bake with it yet.
