good new soup recipe

since people were looking for some good soups i made a version of this one last night.

added: celery and carrots, a little extra water

substituted: chicken stock for veggie stock, baby spinach for escarole, cut up whole tomatoes for diced (because i like them chunkier and that is what we had in the cabinet), orzo for farafallini.

it was really good and made enough for 2 bowls last night, 2 lunches, and another dinner to freeze.  i served it with some pillsbury grands biscuits.

  • This is kinda similar to my mom-mom's recipe, except she used cannelini beans and made mini meatballs.  I am usually too lazy to make meatballs so I add shredded chicken to it instead to beef it up a bit.  And then of the very end, add an egg beaten with some parm cheese and just wisk it in.  We had this every new year's day.  Yum.
