Share your meatloaf secrets

So tomorrow I am thinking of making this: http://allrecipes.com/recipe/brown-sugar-meatloaf/Detail.aspx

What are your secrets? Anything ya'll think I should change about this recipe?

I am planning on adding garlic to the meat mixture, and putting the glaze on top instead of the bottom. But the only other time I made meatloaf I thought it was gross. This will be my second time ever trying (or making) meatloaf.

  • My secret is using a pacakaged seasoning from our local butcher.  Embarrassed Normally I put fresh ingredients in everything, but not that one. I can never get it right otherwise.  Good luck!!

  • Lilou, that doesn't help me.. LOL I want to know what the magic seasonings are from your butcher. 

    I have given up making anything fresh (for the most part) for the duration of my pregnancy. Considering this is like the 6th time I have made a meal in months.

  • I always make Turkeyloaf and use bread crumbs, an egg, some itialian seasoning (in the spice aisle) and then we dip in ketchup

  • Sorry, I am not helpful!!  Lol.  If I were to make it from scratch I would probably throw in garlic, salt, onion/onion powder, seasoned bread crumbs, egg and worshershire sauce.

  • I make meatloaf in muffin tins.  Great for portion control, I found it while doing WW.

    Ditto!  Except that I use oatmeal instead of bread crumbs. I also add a packet of Onion Soup Mix, ketchup, and mayo.

  • We do not use a magic recipe but we use: diced onion, diced red pepper, garlic, salt, pepper, 1 egg, breadcrumbs, and ketchup. And then we put ketchup on top.

  • My meatloaf is 1lb of ground beed, 1 lb ground turkey and 1lb of ground sausage.  Make breadcrumbs with about 3/4 of a loaf of bread, and finely chop 1 onion.  Put in whatever seasoning you like, I usually use salt, pepper, garlic powder, and worshishire sauce.  The add 3 eggs and use your hands to combine.   Then divide the mixture in 1/2 and make 2 loafs and bake in the over at 350 for 60-70 mintues.
  • I use half turkey/half ground beef and a packet of McCormicks Meatloaf seasoning Embarrassed.

    I follow the directions on the back of the packet.  It's tasty enough for us.  This is the way my mom made it, so it's familiar to me.

  • My dad used to make "kitchen sink meatloaf". Basically he threw in whatever he had. The key ingredients are minced onion, one egg (although sometimes he would hardboil a few and put them in the middle of the loaf for fun), breadcrumbs, ketchup, one pound ground beef or turkey, shredded cheese, and mix it all with your hands. Then he would go around the kitchen and throw in whatever he felt like it. Form loaf, place in baking dish, and put ketchup on top. Bake at 350 for an hour.

  • My DH is the meatloaf maker in our house.. I believe he uses ground beef, a few eggs, tomato juice, ketchup, wheat saltines and he adds fresh chopped veggies, old bay seasoning, garlic powder, salt, pepper, and parsley flakes. top with a bit of ketchup on top and throw in the oven for about 45 minutes-1 hour on 375. On occasion we would throw some shredded cheese on top.

    I don't know off the top of my head. I don't have a recipe that I follow each time. If you google muffin tin meatloaf, you'll get tons of pops :)
