What's for dinner?

We have a pound of ground beef that needs to be used, so enchiladas it is! I've never made them before, so we'll see how it goes. :)

(Btw, I cannot stop sneezing. This could make the enchiladas extra special... HAHAHA. Soooo j/k)

  • I have ground beef thawing in the fridge but I don't know what to do with it. I could make meatloaf, but I'm not a huge fan...and I don't want tacos. Ugh. I just really don't want to cook to begin with LOL

  • I am going to dig through the freezer and pantry and throw something together.... since we're trying to save money we are eating what we have before going to the grocery store.  I hate throwing things away that have expired.

     We are also doing this. Well, I am also doing this. LOL. We need to stop spending so much money on food. DH has been OOT (except for weekends) for 2 weeks, and I have been eating only what we have here. The first couple of days were hard... I think breaking the routine of "picking something up" was the hard part. I still manage to make something that I like out of what we have here. It's fun for me to challenge myself to make something with what's on hand. I like a challenge! And I've saved about $60 by not eating out so much. Guess that's good, since my $260 a month SL payment starts in July.

  • DH is making us Mac & Cheese. :-)
