dinner ideas?

What have you made lately that is good?  I am stuck in a beef stew rut!

  • Well, since it's Friday and all (and I tend to eat fish on Friday, and not for religious reasons) here's a simple recipe I use:

    Take a nice fillet of fish - sea bass works a treat - and make sure it's cleaned (no scales) and pat dry with some paper towel to remove excess moisture.

    Take some plain flour and season (salt, pepper is fine but you can also jazz it up with some chilli flakes or ground chilli powder or some parsley.) Mix it up well so it's evenly distributed regardless of what you put in.

    Coat the fish in the flour (it should just be lightly coated). Bake in the oven.Serve with some nice greens (I'm digging broccoli at the moment) and a scoop of mash.

    The fish comes out with the most delicate kind of 'batter' and is so tasty. Much better for you that crumbs or chip shop batter.

  • If you want another soup/stew, I always make chicken and vegetable soup a lot during the winter. It's basically an "everything but the kitchen sink" soup.

  • Last night I made chicken quesidillas and some fresh salsa (yum!), but latetly I've been on a hoagie/baked sandwich kick.  I've been making them with all sorts of things.  I just make whatever meat/veggies, put it on a big roll, add a little cheese, toast it in the oven, and then add lettuce, tomato, onion and balsamic vinegar/oil - pretty easy and quite tasty. 

    I'm in search of some good soup recipes if anyone has any good ones. 

  • Another easy (but kinda special) fish recipe for salmon fillets.  Mix together crab meat (tinned will do if needed) with an egg yolk and enough breadcrumbs to bind it all together & season with salt & pepper (Old Bay if you have it).   Wrap this mixture in the fillets.  Place in a baking dish, drizzle some white wine on the bottom about 1/4 inch deep.  Bake for approximately 20 minutes or until fish flakes at 200 C.  Enjoy!

  • The other night I mada chicken noodle casserole. It was quite tasty.. even DH loved it! Heres the recipe I used:

    2 chicken breasts, diced, 1/2 small onion finely sliced, 2 cloves of garlic finely minced, 1 1/2 cups of fusilli pasta, 1 3/4 cups of frozen mixed veggies(corn, green beans, carrots, broccoli, and peas), a can of cream of chicken soup and mild cheddar cheese, grated.  boil the pasta to around 1/2 done, sautee the onions and garlic for 1-2 minutes. mix everything in a casserole dish (even the frozen veggies), and bake for 25 minutes. Sprinkle the cheese on top and broil until golden brown.

  • I made a curry with eggplant the other day. ?I found the recipe on allrecipes.com. ?It's a lot easier than I thought it was going to be and it tastes delicious.
