I'm thinking of starting "no meat Monday" at our house. Not for any particular reason, just cause.
I'm not big into mushrooms, peppers, or onions (although if I food process the heck out of the last two I don't mind them *in* the food). I haven't found very many recipes that are vegetarian that don't have mostly one or all three of those ingredients. Do you have any you can share? Or know of a good website that has them? I also haven't had very good luck replacing meat with tofu, DH doesn't like it, and I don't really either.
