since people were looking for some good soups i made a version of this one last night.
added: celery and carrots, a little extra water
substituted: chicken stock for veggie stock, baby spinach for escarole, cut up whole tomatoes for diced (because i like them chunkier and that is what we had in the cabinet), orzo for farafallini.
it was really good and made enough for 2 bowls last night, 2 lunches, and another dinner to freeze. i served it with some pillsbury grands biscuits.
