I made the fire-roasted tomato sauce, and it was delicious.  I was out of cayenne, so it had less heat than it was supposed to, but it was great.

I saw this cake, and thought of you.  You could do something similar for a baby gender reveal cake, maybe?

  • Glad you liked it Steph!  I've been meaning to make a rainbow cake for a while now, I like that version better than the one where you pour all the colors in one pan (http://diamondheadz.wordpress.com/2009/01/26/rainbow-cake/) - Martha's version looks much classier.
  • Yeah, Martha's version has a neater appearance. 

    But dividing the batter and baking 6 different layers is a lot of work.

  • Very true - but a 6 layer cake seems so much more impressive.  I think I only have 5 8" pans though so it would be a pain.
  • Five 8 inch pans is still quite impressive.  You would just have to reuse one pan.
  • I'm making the fire roasted tomato sauce dish tonight (if I'm not in the ER! Wink). I couldn't find a fresh cayenne pepper. Could I use the powder stuff? Any clue how much? Or should I leave it out all together?

     The rainbow cake looks cute. I like the separate layers better than the single pan version. You can totally do it with just 5 colors, though I think a true rainbow cake should have 7 (Roy G. Biv and all).  :)

    We have so much time, and so little to do! Strike that, reverse it.

    Hopefully you aren't in the ER!  I have cayenne peppers growing in my backyard so I have an abundant supply, however you could substitute the powder (I'd start with 1/2 tsp to 1 tsp depending on how spicy you like things) or you can substitute a jalapeno pepper. 

    The rainbow cake should have 7 layers but I'm guessing it would be next to impossible to get a true Indigo color.  I'm going to have to attempt this soon.

    Also I saw your comment on the pina colada cupcakes -- how does a cupcake implode??

  • Haha, it collapsed inward, like a souffle gone awry. It is so odd because only one did that. I think they overbaked after I took them out of the oven (I took them out once the toothpick finally starting coming out clean). They still taste great. I can also blame any inefficiencies on baking them while in pain.  So, overall I'm batting 1.000 on taste (on your cupcakes) but only .500 on aesthetics. :)

    ETA: Oh, and I couldn't believe how powerful rum is in baking compared to tequila. I would never guess there was tequila in the margarita cupcakes, but you can totally smell and taste the rum in the pina colada ones even though there is less in there!

  • Usually if they collapse like that its underbaking - maybe that one was fuller than others or your oven doesn't bake evenly.  I have to turn my pans half way through because one side of my oven cooks hotter than the other side.   I filled mine too full for the first pan I made and they spilled over the sides of the cups instead of getting nice domes because they don't rise as much so they are a little finicky.
