Foodies...question for you

Can you grill zucchini?  Embarrassed

We're having grilled chicken tomorrow, so can I just brush it with some oilve oil and sprinkle salt/pepper on it and put it on the top rack?  We normally  bread it and bake it, but I figured maybe since we'll have the grill going...

Any suggestions are appreciated.  Thanks!

  • You sure can!  My mom grows zucchini, and if you've never done so, it grows like CRAZY!  We eat a ton of it.  You can do it just the way you said, though I'd put it in aluminum foil to keep it from falling through the rack.  Another yummy thing is to marinate it in some Italian dressing, or in some Balsamic vinegar and olive oil, then grill it.  Just don't leave it in a pool of dressing in the foil when you cook it, or it will get soggy!
  • NYGirlie...that sounds delicious and that's what I'll do.  This may be a dumb question, but how long would you marinate it?  Thanks for the foil tip.  I hadn't thought of that and probably would have been fishing zucchini out of the coals! 
  • I do all of the time.  I have the grill skillet thingy and I use that alot.

  • I usually don't marinate veggies for too long, because you aren't trying to tenderize them like you do with meat.  I'd say maybe 15 minutes would suffice, right before you're ready to cook.  Enjoy!!
  • You totally can! I love zucchini on the grill! Yummy!
