  • yesss.... i haven't tried any others... I just want something that doesn't sink or fall apart...!

    Now I know why Denver needs so many cupcake shops! For people like me who can't bake at altitude.

  • Um, I don't think that is why.... ;)  I don't think Denver actually needs so many but hey, who am I to say? ;)

    I think that recipe you tried is bad.  I always adjust recipes from good sources, ie ones that you know work at sea level or from places like Cook's Illustrated. 

    Sinking and crumbling are key signs of a poor recipe or a recipe that hasn't been adjusted.

    26 regular cupcakes / 350 degree oven

    1 cup (2 sticks) unsalted butter, room temperature
    2 cups sugar
    4 large eggs, room temperature
    2-3/4 cups flour
    1-1/2 teaspoons baking powder
    1/4 teaspoon salt
    1 cup milk
    1 teaspoon vanilla extract
    1/2 vanilla bean, seeds scraped out?

    Well, I adjust everything.... Sometimes the changes are small sometimes huge.  Do you know the blogger?  Did they post pictures of the 'naked' cupcakes?  Pics show exactly how well the recipe works.
