So I've decided to try my hand at a little baking and dessert-making this weekend and I'm wondering if you ladies have any tried-and-true recipes you fall back on?

  • I have been baking a lot of my mom?s recipes lately and here is what I've made:

    Chocolate squares (more fudgy than brownies)

    Banana cake (best icing ever!)

    Peanut butter marshmallow squares

    Let me know if you're interested in any of these and I'll post the recipes.

  • Chocolate Squares

    ? cup butter

    1 cup brown sugar

    1 egg, beaten

    1 ? tsp vanilla

    ? cup flour (sifted, all-purpose)

    2 tbsp cocoa

    ? cup pecans or walnuts (I skip these as I?m not a fan)

     

     

    Preheat over to 350.

    Melt butter in 8x8 baking pan.   

    Pour butter in bowl with brown sugar.  Cream butter and sugar.

    Add egg and vanilla.

    Fold in flour, cocoa, pecans.

    Spread in pan.

    Bake at 350 for 25 minutes. 

     

    Frosting

     

    Hot water (boiled in kettle)

    ? cup icing sugar

    ? tbs cocoa

    ? tsp vanilla

     

    Mix icing sugar and cocoa. 

    Add vanilla. 

    Stir in just enough boiling water to make icing (like a few tablespoons). 

    Spread on warm squares. 

     

     

  • Banana Cake

     

    4 tbsp sour cream  *

    1 tsp baking soda

    ? cup butter

    1 cup sugar

    2 eggs

    1 tsp vanilla

    1 ? cups sifted cake flour

    1 cup mashed ripe bananas (about 3) **

     

    Preheat oven to 350. 

    Combine sour cream and baking soda.

    Cream the butter and sugar until it?s almost like whipped cream (light and fluffy)

    Add eggs, one at a time, beating well after each.

    Add vanilla and mix in the sour cream on low.

    Add the flour and banana alternately. Mix after each addition on low. (Do not overbeat)

    Pour into 8x8 pan (greased with shake of flour to coat)

    Bake at 350 about 45 minutes (my mom increased to 375 but that was too hot for my oven, it came out slightly dry and starting to burn around the edges).  Check it at 40 minutes.  Cake is done when centre springs back, toothpick comes out clean and cake is away from sides). 

    Remove from oven. Cool. Coat with icing sugar or make brown sugar icing.

     

    * Instead of sour cream you can use table cream ? stir in a little less than a teaspoon of white vinegar and let it sit a few minutes to sour and thicken slightly)

    ** For the bananas, I never managed to have three black ones at a time.  So whenever I had one, I froze it with the peel on.  Then thaw on the counter the day you?re making the cake.  It?s kinda nasty when you?re peeling them, but they?re great in the cake. 

     

    Brown sugar icing

     

    5 tbsp brown sugar

    5 tbsp cream

    2 tbsp butter

    1 tsp vanilla

     

    Boil first 3 ingredients for 3 minutes.

    Remove from heat. Add vanilla and beat slightly by hand. 

    Pour over cake.
