What's for Easter Dinner?

What dishes do you expect to see at a traditional Easter dinner? Any favorite desserts?

  • Spiral sliced ham is a "must" for me.  I usually add aspargus, spinach salad, and deviled eggs.  Then depending on when Easter is I'll pick a starch.  If it's still wintery is a hot potato dish (twice baked, scalloped).  If it's warmer I'd go more pasta salad and skip the spinach salad.
  • Baked Ham, Mashed Potatoes, Roasted Asparagus, Green Been Casserole,  Homemade Rolls, Strawberry Shortcake, Pavlova and Rice Pudding.
  • Our typical Easter dinner includes: 

    Spiral sliced ham (sometimes from honeybaked when we have the $$), country style green beans, scalloped potatoes, cole slaw, carrot salad, olives/pickles and rolls.  We also have mac & cheese, but thats for my Dad bc he doesnt eat the most veggies. 

    For dessert, its almost always hummingbird cake.

    Sounds great! What is hummingbird cake? Do you have a recipe? My husband doesn't really enjoy ham, so we may go cornish hen this year. Corn on the cob is so bright and delicious, especially if you boil them in sugar water. Cole slaw is a definite winner. A friend of mine makes hers with apple slices. A great idea! You all have got to try Paula Deen's spinach pinwheels recipe http://www.foodnetwork.com/recipes/paula-deen/spinach-gruyere-puff-pastry-recipe/index.html! It really is good and would look great on the table.

    It is soooo good :) 

    Hummingbird cake has pineapple and bananas in it and I think my mom also puts coconut in it too.  She uses walnuts, not pecans as well.  Always frost it with cream cheese frosting!
