Jambalaya is to throw together. I had a some frozen chicken breasts and weird chicken jalapeno sausages that DH likes in the freezer also. Jambalaya couldn't be easier - brown up some meat w/spices (basic -salt, pepper, cayenne, cajun - whatever you like). Throw in a chopped up green pepper (or red or whatever you like) a couple of chopped onions, some tomato sauce, or diced tomatoes or whatever, or just liquid if you want it plain. A proportionate amount of uncooked rice, cover an inch over the mixture with liquid (broth, water/ wine, combination of both or all) and cook off for about 20-25 minutes. I have a whole huge pot of it for DH and I to have for the next 3 nights.
