Best recipe for using up cooked chicken?

I roasted a chicken tonight and now I've got a bunch of leftovers.  What's your best way to use up leftover chicken?

  • I like to make chicken and biscuts. I make cream of chicken soup, add 1 cup of milk to it, then add the chicken and some frozen peas and carrots. Bake in the oven at 350 for about a half an hour (or until hot), make some biscuts and there ya go!

  • chicken pot pie, chicken soup (chicken corn, chicken noodle, taco w/chicken, etc etc), enchiladas
