Something super easy would be any type of Asian/Asian Fusion dish! My personal favorite is a yellow thai curry. Purchase a jar of Thai Yellow Curry Paste (check the ingredients to make sure but it should be gluten & dairy free) and then mix with coconut milk or a mix of coconut milk and coconut cream. Cook chicken breast, tofu, lamb, ect. in the sauce as well as veggies (IE: potato, carrot, onion, eggplant, ect.)
Stirfry is also super easy although you have to make your own sauce since most jarred stir fry sauces are thickened with flour. There are tons of easy stir fry sauces depending on what you have in your pantry. If you cube your meat small and choose fast cooking vegetables it can be a 30 minute meal!
Also try supercook.com. You can search for recipes by ingredients that you have in your pantry and also eliminate dairy from the options (although they don't have gluten as an option unfortunately!)
