NBR- camping food

This is really the only board I frequent and I rarely post but I need some help. We are camping this weekend and I need some different ideas for breakfast. We are not poptart kind of campers. We need good hot food to start the day. I even have my coffee while camping too. Yep, I'm that camper. So, does anybody have any good ideas for breakfast foods? Thanks a ton.

    We use a camp stove with propane so we do all regular breakfast foods like scrambled eggs and sausage or bacon or taylor ham.

  • Bacon, and then eggs fried in the bacon grease, is the ONLY way to eat breakfast while camping, IMO!

    We've gotten lazy in our old age and now use a propane stove, but if you don't have one (or are camping purists), find a good flat rock, nestle it in the coals of your campfire and let it heat up, then put a cast-iron skillet directly on the rock, with coals around it.  Just make sure to get the fire going early enough so you have good coals.

    YUM!  I'm so jealous now.

  • Are you doing park and pitch or are you backpacking?

    My husband and I usually backpack so bacon and eggs are out of the question.  We usually do oatmeal, and instant coffee can still be made (since we can still boil water).

  • Jimmy Dean's Breakfast Skillets are really good. I know it's frozen, but if you keep it in the cooler it should be fine. I usually defrost overnight before cooking the next morning anyway.

    I always bring pancake mix (just add water kind). Bisquick has Shake and Pour where you mix and pour from the same container. 

    ETA: One of my favorite ways to make the skillet meal is to add scrambled eggs then add a scoop or two to a warm flour tortilla to make breakfast burritos.

    We've done the Bisquick Shake & Pour before too.  It comes out good.

  • We spent a week camping last week - so relaxing. We too do the cast iron with bacon and then eggs in it too. I also get canned corned beef hash which DH loves and due to high sodium content, only gets when we're camping.

  • I guess it depends on whether you're camping at a site or back country camping which tends to limit the amount/type of food your able to bring.  

    Eggs, fried spam (yes.... SPAM! I love it, but only camping), Tang and tea are my camping breakfast faves.  Along with a ceasar! 

    Oatmeal is relatively easy as well.

  • we make breakfast burritos.  Make them ahead of time, wrap in foil and freeze - then they stay cold in the cooler.  in the morning start a fire and put them in the coals until they heat through.

    We also make pancakes over the fire - we don't have a stove so we just take a grill grate and put it over low burning coals and use a long spatula

    French toast in a hobo pie maker.
