1 to 1 1/2 lbs per person should be plenty.
Everyone's different, but we actually do a half pound per person and that fills us up - with potatoes and veggies on the side.
The legs are already cooked - so any cooking preparation should be quick. I really like to steam my legs so they cook quickly and don't get rubbery. I also will use the meat in things like crabmeat terrapin or deviled crab.
