Fingerling potatoes

I have a couple of pounds of fingerling potatoes.  Never had them before, never cooked them before.

Anyone have an easy, delish recipe for these?  I'm not feeling too good today so I don't want to be in the kitchen all afternoon cooking dinner.  Thanks.

  • Since you really use them for their shape, I would just roast them with some olive oil and rosemary and finish with sea salt.

    This.  I loved herb roasted fingerlings.  You could toss them with any herb--I like to use garlic too.  Don't dice it, just crush the cloves slightly and toss em in there.

  • I boil them and then just toss them with a little bit of butter, salt, and pepper
