Pumpkin!!

Post your recipes that involve pumpkin.  I am in that kind of mood on this lovely fall afternoon!  This is all I have and would like to expand:

Pumpkin seeds:

Clean and dry out over night

Toss in a bowl with Olive Oil and salt ( I use garlic salt, YUM!! DH uses butter spread that you would use on popcorn.  Gives it a different taste)

Bake at 350 degrees until golden (20 mins)

 

Pumpkin Chip Muffins:

1 can Pumpkin Puree(Fresh or Canned)
3 Eggs
2 cups Flour
1/2 cup Vegetable Oil
2 cups Sugar
1/2 Teaspoon Salt
1/2 Teaspoon Cinnamon
2 Teaspoons Baking Powder
2 Teaspoons Baking Soda
  1. Pre-heat oven to 350 degrees.

  2. Grease and flower a tube pan.
  3. Add all ingredients, except the chocolate chips, into a mixing bowl.
  4. Mix well.
  5. Blend in chocolate chips by hand mixing.
  6. Pour mixture into the greased and floured tube pan
  7. Bake for one hour.
  8. Remove and allow to cool before serving.

  • I usually bake the pumpkin seeds as soon as I get them out of the pumpkin.  Are they better if you wait over night??

    I was taught to dry them out so there is less moisture inside, but I could be wrong.

    I will have to try that this year!!  Dh LOVES pumpkin seeds and it seems I never make enough!!!

    Chocolate Chip Pumpkin Bread

    1 1/2 cups flour

    1/2 teaspoon salt

    1 cup sugar

    1 teaspoon baking soda

    1 cup pumpkin puree

    (Note: look for the canned stuff, but make sure it is 100% pumpkin and NOT pumpkin pie filling)

    1/2 cup vegetable oil

    2 eggs, beaten

    1/4 cup milk

    1/4 teaspoon nutmeg

    1/4 teaspoon cinnamon

    1/4 teaspoon allspice

    1/2 cup walnuts (optional)

    1/2 cup chocolate chips


    Preheat oven to 350.


    Stir together first four dry ingredients (flour through baking soda). Mix pumpkin, oil, eggs, milk and spices together, then combine with the dry ingredients, mixing until just combined. Add walnuts and chocolate chips.


    Pour into well-buttered loaf pan. Bake 50-60 minutes. Turn out of pan and cool on wire rack.

  • My MIL has an awesome recipe for Pumpkin Soup.  I'll try my best to remember to post it when I get home.  She was nice enough to make a batch when she visited this weekend, but it is already gone! Sad

    2 cups of no-fat (skim) milk
    1/2 teaspoon pumpkin spice
    15 ounce can of pumpkin
    8 ounces of fat-free Cool Whip

    Make pudding first, then fold in ingredients. Serve!

    Yes, Anheiser Busch, or Imbev, or whatever they are called today, they have a very yummy pumpkin beer.  I want to say it is called like, Jack's Stout and it has a pic of a scary Jack O' Lantern on the front.  It is so good!

    I am hoping they have some pumpkin beer at the Octoberfest, but I will not get my hopes up!
