How long is corn on the cob good for?

I got a few ears of corn at the farmers market early last week and put them in the fridge after 2 days. Do you think they're still good? The corn "looks" ok, but what do I know!

  • The sugar would have broken down by now, so it won't be sweet.
  • Have you husked them?  If not, they are likely fine.  But the sugars in corn turn to starch within 15 minutes after being husked, so if you have husked them (or even just pulled back the top portion a bit) then I would toss them.

     

  • If the kernels are still firm they should be fine.

    It can't hurt to cook them and try them ...

    They could have been picked the day you bought them at the farmer's market.  I certainly think some corn people buy in the grocery store has been off the plant for a week and a half before you take it home from the grocery store. 

  • I probably wouldn't eat it, but they might be okay, especially since you got them at a local farmers's market and it was likely picked that same day.

    However, corn is best eaten right away. The longer it sits, the less sweet it will get (the sugars start to breakdown).
